The smokey, barbecue aromas of the American west combine with the delicately spiced tastes of the far east to create ambitious dishes that excite the tastebuds and showcase the finest in global cooking.

The Firepit is a fine-dining restaurant with a diverse and contemporary sharing-menu delivering renowned dishes from all over the world. Chef John Bingley and Maitre’d Sergio Gomes help bring this exciting new epicurean concept to Canterbury. Our bold and indulgent sharing menu delivers experimental dishes which do not disappoint. Our inspiration is vibrant and relaxed with an edgy and sophisticated spirit.

After extensive round the world travel, the Firepit team have sourced flavours, methods and dishes from every corner of the globe. John Bingley, Executive chef comments:

“The Firepit represents the zenith of my career to date, I am so pleased to be working under the direction of James Tory and Johnathan Callister the directors here at Cave. They have given me a remit to deliver the best fusion food from around the globe, bringing a brand new concept to Canterbury. We have such a passion for food and we want to bring the joy and excitement to everyone.”

The Firepit restaurant & lounge bar


Our Firepit bar nestles cosily alongside the first floor restaurant and is accessed by a purpose built glass bridge, creating a sense of occasion for guests.

With a terribly chic and taste provoking list of cocktails and premium spirits, sit back, relax and enjoy new and tongue-tickling tastes from around the world.

Please see below for our ever-changing, seasonally influenced menus. We are assiduous in our search for the best suppliers of quality produce in and around the garden of England. Chapmans of Borough Green supply our fish, our beautifully marbled, aged USDA prime beef is sourced from Tom Hixon, our cheeses from Albion Fine Foods and TJ’s deliver our local vegetables daily.

Firepit Dinner


Fill your table with an array of flavours, our sharing plates offer the best way to sample our mouth-watering menu. Some of our signature dishes include our Alaskan King Crab with spiced butter sauce, Miso marinated beef fillet, Orange and Ginger glazed Pork.

Sunday Firepit Tasting Menu


Prepare for a sumptuous dining experience with our Firepit tasting menu. Enjoy mouth-watering flavours, featuring our signature dishes which have been exquisitely paired by our head chef. Available Sunday's only, A la Carte also available.

Our extensive wine list has been carefully selected to pair perfectly with the depth of flavours offered by our menu. Try our exciting house cocktails or select from our wide and varied spirit collection and craft beers.

Breakfast Menu


Our breakfasts are fit for a king. From fresh fruits and yoghurt to a full cooked English, Firepit Style. We make sure you can start the day right. We offer a breakfast in bed option so hotel guests can indulge in delicious dishes, without leaving their rooms. Please see both our menus below.

Afternoon Tea


Come and while away an afternoon with good friends with our 3-tier Afternoon Tea. Our sandwiches, scones and fresh cakes are made on-site daily - you must try our red velvet we hear it's the best around! Bubbles are optional :). Available Monday to Saturday. Afternoon tea is served in our Firepit restaurant Monday to Saturday, between 12 noon and 4pm.
